Just incase you needed some New Year breakfast inspo to see you through the dark, cold and (let’s face it) kinda miserable mornings – I thought I would share with you this easy breezy breakfast dream; pretty much guarenteed to start your day on a brighter note. Because it’s the little things in life that make a difference, no?
The beauty of this is that you can prep the oats the night before so they are ready to grab and layer up with the simple but oh-SO satisfying banana matcha ‘cream’. All you need to do is blend the ingredients together for half a minute before you’ve got yourself a one way ticket to the breakfast worth getting up for. Now who’s down for a lil taste?!
And let’s not forget that matcha is a game changing double whammy ingredient.
How so, you ask? Well, you get the caffeine boost (with out those post-flat white jitters to follow) and it provides a whole host of antioxidants, vitamins and energy boosting benefits. I’ll be honest – the taste alone does absolutely nothing for me, but when combined with a little banana action you really don’t notice it; you just reap it.
Personally I like to play around with buckwheat flakes as an oat-free base (they’re still not sitting well with me!) but you can obviously just use regular oats for a cheap, accessible and totally nutrient dense option. Or if you’re gluten free or happen to have quinoa leftover – why not shake things up with some of that? The jar is your oyster, babe.
Ahem, or something like that…
I also opt for unripe green bananas, as they act as a resistant starch in the gut and help to feed the friendly guys living in there. They are also lower in sugar – so if you’re sensitive to fruit in the morning then it might be a good idea to pick out those green guys as opposed to the yellow when you do your next supermarket swoop!

- 50g rolled oats (you can use buckwheat or quinoa flakes to make it gluten free)
- 1 cup almond milk
- 2 tbsp ground flaxseeds
- ¼ tsp cinnamon
- 1 small unripe banana
- 1 tsp matcha powder
- 1 tsp sweetener of choice (optional)
- 1 tbsp shredded coconut
- The night before, combine the oats with the milk, chia seeds and cinnamon. Leave to soak in the fridge overnight, then in the morning transfer to a glass.
- Blend the banana with the matcha and your sweetener if using with a splash of milk before layering on top. Decorate with the coconut and dig in!
